Double Choc Zucchi Muffins
Chocolate muffins with zucchini in them? Did I read that right?
Yes, you sure did! Trust me, you cannot taste the zucchini in these. These muffins are rich and decadent and soft and squashy and are all ‘round a deliciously fun way to spend some time. You won’t be disappointed!
Makes 12 large muffins or 24 mini muffins
INGREDIENTS
125g unsalted butter
2 cups plain flour
2 tsp baking powder
1/2 cup cocoa powder
3/4 cup caster sugar
1/2 tsp salt
1 cup grated zucchini (this is usually 1 large or 2-3 small-medium zucchinis)
200g chocolate chips (I like milk, but you can use whichever you like)
2 eggs
1 tsp vanilla extract
1 cup buttermilk
DIRECTIONS
Preheat the oven to 180 ̊C. Line the muffin tray with muffin liners (or you can grease your tray with oil or butter and then dust with flour if not using muffin liners).
In a small bowl, melt the butter in the microwave in 20 second increments, making sure to give it a really good stir in between. Set aside to cool slightly.
Enclose the grated zucchini in the centre of a muslin cloth/chux cloth/thin tea towel and squeeze as much liquid out as you can. You could also do this just with your hands, but you'll need to do it in batches. Remove the grated, drained zucchini, place it on a chopping board and use a knife to chop it up into smaller bits (this is optional).
In a large bowl sift the flour, cocoa powder and baking powder. Stir in the sugar and salt. Add the grated zucchini and chocolate chips and stir to combine.
In a medium sized jug, crack the two eggs and use a fork to gently beat.
Make a well in the centre of the dry ingredients and gently pour in the wet ingredients (slightly cooled melted butter, whisked eggs, vanilla extract and buttermilk). Mix the ingredients together until just combined (be careful not to overmix).
Divide the batter evenly amongst each muffin liner.
Place in the preheated oven to bake for 20-25 minutes. Remove from the oven, test with a skewer to make sure they're cooked - if the skewer comes out clean, they are done! If it comes out with some batter on it, pop them back in the oven for 2 minutes more before re-testing.
Allow to cool slightly (5 mins) in the muffin trays, before transferring to a wire rack to cool completely.
