What’s better than a good book? A good book and a cookie! These Reading Cookies are colourful, chewy, and the perfect snack to nibble on while you flip through the pages of your next adventure. Bake a batch, grab your favourite story, and let the magic begin.


Makes approximately 16 cookies

INGREDIENTS

  • 125g butter, softened to room temperature

  • 90g brown sugar (½ cup)

  • 115g caster sugar (½ cup)

  • 1 egg

  • 1 tsp vanilla extract

  • 240g plain flour (1½ cups)

  • ½ tsp baking powder

  • ½ tsp salt

  • 160g Smarties

DIRECTIONS

  1. Preheat your oven to 180˚C (conventional). Line 2 large baking trays with baking paper.

  2. In a mixing bowl, beat the butter and sugars together with an electric mixer until just combined. (It’s fine if you can still see a few little butter chunks!)

  3. Crack in the egg, add the vanilla, and mix on low speed for about 20 seconds. The mixture will look wet, but the egg should be just mixed through.

  4. Add the flour, baking powder, and salt. Mix again until everything is just combined.

  5. Stir in half of the Smarties with a spoon.

  6. Scoop about 40g of dough (roughly the size of a golf ball) into your hands, roll it into a ball, then gently squash it onto the tray. Repeat with the rest of the dough, leaving space between cookies as they will spread.

  7. Press 4–5 Smarties on top of each cookie.

  8. Bake for 10–12 minutes, or until the cookies are just starting to turn golden around the edges.

  9. Let them cool on the trays for a few minutes, then transfer to a wire rack to cool completely.
