Coconut & Apricot Bliss Balls

 

Makes approx. 12 bliss balls

INGREDIENTS

  • 1 cup dried Turkish apricots 2/3 cup desiccated coconut (+ 1/3 cup to roll the balls in later)

  • 1 tbsp coconut oil

  • 1 tbsp honey

DIRECTIONS

1. Add the dried apricots to the food processor and pulse until finely chopped.

2. Add 2/3 cup coconut, the coconut oil and honey to the food processor and pulse until little clumps of dough start to form.

3. Spread 1/3 cup coconut onto a plate.

4. Scoop 1 tbsp mixture into your hands and roll into a ball. Roll each ball in the coconut, coating it all over. Repeat with the remaining mixture.

5. Place in an air-tight container and refrigerate.

To store: Place in an air-tight container and store in the fridge for up to 1 week (if they last that long 😉)
