APPLE & BERRY CRUMBLE

There’s nothing quite like the smell of apple crumble baking on a chilly day. This easy individual apple and berry crumble combines chunks of apple and berries with a golden, buttery crumble topping. When it’s chilly outside, this little apple and berry crumble is like a warm hug in dessert form! It’s quick to throw together and perfect with a scoop of ice cream, a dollop of yoghurt or a swirl of custard.

INGREDIENTS:

Serves 1-2

🍏 Filling

  • ¾ green apple

  • ½ cup frozen berries

  • 1 tsp honey (or to taste)

  • 1 tsp lemon juice

🍓Crumble topping

  • ½ cup plain flour

  • 2 tbsp rolled oats

  • 50g cold butter, cubed

  • 2 tbsp brown sugar

  • 1/2 tsp group allspice

  • Small pinch of salt

METHOD:

  1. Preheat oven to 180°C conventional (160˚C fan-forced).

  2. Peel, core and finely dice the apple.

  3. Place the diced apple and berries into a ramekin. Drizzle over the honey and lemon juice. Give it a gentle stir so it’s evenly coated.

  4. In a small bowl, rub the butter into the flour with your fingertips until the mixture resembles coarse breadcrumbs. Stir in the oats, brown sugar, allspice and salt.

  5. Scatter the crumble topping evenly over the fruit, leaving some clumps for extra texture.

  6. Bake for 20–25 minutes until golden and the fruit is bubbling.

  7. Serve warm — delicious with a dollop of yoghurt, custard, or ice cream.

NOTES:

To make this dessert gluten free, substitute the plain flour for GF plain flour and the rolled oats for quinoa flakes.

Change the fruit up depending on what’s in season! You could substitute the apple for pear (keep in mind that pear is softer so you may not need to chop it as finely). You could also swap the mixed berries for one type of berry. Swap the lemon juice out for cinnamon or some more mixed spice. Experiment!
